Chicken Caprese Kabobs
This is honestly one of the easiest meals we make regularly and pretty healthy as well. We typically will serve this with a warm baguette and “italian butter” (Olive oil, grarlic, oregano, pepper, and parmesan)
- 3 Chicken breasts cut into large cubes (then need to be bigger than a cherry tomato)
- 32 Cherry tomatoes
- Pesto (I prefer homemade https://www.loveandlemons.com/pesto-recipe/)
- 4 pieces Burrata Cheese (sliced buffalo mozzerella is an option too)
- 4 cups fresh baby spinach
- Olive Oil
- Balsalmic Glaze (or Balsalmic Vinegar works too)
1) coat the chicken pieces in pesto and then alternate 4 pieces of chicken and 4 tomoatoes on each kabob skewer (plan 2 per person)
2) Grill, flipping every couple minutes until chicken is done (160 degrees)
3) Place ¼ of the spinach on a plate, slice the burratta in half and place in the middle. Layer two kabobs over the cheese.
4) Drizzle Olive Oil and balsalmic oil as well as fresh cracked pepper over the the entire plate
